Whoa am I ready for vacation!

Justin was smart when he decided to work from home.  After a long weekend and knowing I leave for vacation in less than 24 hours makes coming into work for one day pretty tough.  Hopefully it will go quickly.  The commute in this morning was horrific.  But I am here.  I am working.  I am praying that my customer wants to play nice today and I don’t have a hellish day.

But more important than any of that, today is Justin and I’s 2 year anniversary.  Hope anniversary love!  How we’ve grown!

But enough of that doom and gloom, lets look back on the weekend, which was perfection!  We crammed a lot of things in since my last post on Sunday morning.  The rest of Sunday went by so quickly.  After my post, Justin and I headed out for a bike ride.

We rode for almost 17 miles in about 1 hour and 5 minutes.  The ride out was great but we took a different rode back and it was under heavy construction and left little room for error.  A bit intimidating when cars are inches from you going about 50 miles an hour.  We probably will stay off that route until it is finished.

After the ride, I washed and headed to the grocery store to get the supplies for the day.  We were making corn, chicken and doughnuts for our BBQ.  Justin was in charge of the beer can chicken.

Cooked on the charcoal grill for about an hour.  Tasted like HEAVEN.  Justin took care of all the seasonings too.  Amazing!

And I did a recipe that I got from Angela’s blog (recipe actually from Vegan Yum Yum) for Vegan Doughnuts.  I didn’t make mine vegan though…the include real eggs and real milk.

I altered the recipe from Angela’s website a little bit and added an extra 1/2 cup of flour.  It may be because I used an egg instead of replacer and the difference made it too runny.

I shaped them by hand (I do not own a doughnut pan) which was a learning experience.  The first few went in the trash.

I thought they tasted great….very cakey and soft in the middle.

I topped them with plain icing of powdered sugar mixed with milk and then sprinkles.

I served them at the BBQ.  People called them every thing from cookies to cake to “Bookies” because people were saying when you flipped them over they looked like a bagel but tasted like a super soft cookie.  I thought the name bookie was pretty cute.  Overall these were a hit, some teasing because they weren’t fried, but the kids at the BBQ loved them.

The BBQ was a blast.  There was SO much food.  Tons of seasoned meat, hamburgers, chorzo (yum!), rice, corn, 2 different kinds of dip, homemade guacamole, chocolate covered rice krispie treats.

and plenty of beverages….2 kinds of sangria, beer and a lot of Aqua Ardiente, a Columbian drink my neighbors love, which is consumed in shot form:

Around 9PM after lots of food and drink, we started showing Indiana Jones and the Crystal Skull projected onto a sheet.  The kids loved it!

Everyone has set up chairs and the whole night was a huge success!  People want to start doing this monthly, which I think would be fabulous!

So a total success of a BBQ.  We went to bed SO late that night.  After the movie we went and sat out on a neighbors porch and talked.  At about 1:30 I finally called it a night.  And went to bed consuming tons of water.  I had started drinking water during the movie and tried to force as much in me before bed and during the night as possible.  I wanted to run in the morning and I knew that would be a lot harder if I was hungover.

Luckily all the water worked and I was able to get up and run:

Not quite as far as I have been running, but a run none the less.  And a fairly quick one with that.  I went 4.79 miles in 45:18.  That means a pace of 9:27 per mile.  It was getting hot while I was out there.  I probably could have eeked out 5 miles but I am trying to listen to my body and just run to run, not have a specific mileage or time that I want to reach right now.

For the rest of the day yesterday, we spent money getting ready to leave for vacation!  Target (I think we bought 50% of the store in regards to shampoo, conditioner, lotion, sunscreen, etc), Macy’s (O’Neill bathing suits), Gap (got the cutest summer scarf!), and more.  We ran around for about 7 hours straight and were exhausted by the end!

 

Okay, and I just had to include this because it cracked me up.  On Sunday, when we got home from our bike ride, we discovered the the door connecting the house to the garage was cracked.

And that container with the red top is the cats food….which if you notice, the lid is open to.

Upon further inspection of the food, here is what was in the container:

Yes, that is a cat collar in the container.  The little beast (Stiletto) got herself almost inside the container so she could help herself to all her food.  Apparently she must have gotten herself a little stuck.

What amazed me (or horrified me) is that she must have eaten so much that she was full (a rare thing for our cat) that she had reached her limit and gone inside to lay down and digest.

Hope you had a great weekend too!  My aim today is to hit the gym over lunch and lift, leave work as close to 5PM as possible and get home, finish packing, enjoy my anniversary with Justin and get to bed early!  The car is picking us up at 5AM.  Yikes!

    my cat does that too- but usually when the bag of cat food is sitting out- she will bust into it and eat tons of food.. lol but you dont get to be a 22 pound cat by nibbling ; )
